Butternut squash: Fresh, unblemished butternut squash is the key to making air fryer roasted squash. When selecting your squash, look for ones with an intact stem, a dark beige color, and matte skin. Once your squash is ready, peel and cut it into 1-inch cubes. Be careful when cutting it into cubes. If you are new to it, check out my foolproof guide to cutting butternut squash before you start. Also, to simplify your meal prep, you may use store-bought, pre-cut butternut squash for this recipe. However, remember that these cubes tend to be larger, so you may need to cut them into smaller, 1-inch cubes before tossing them in your seasoning mixture. Olive oil: I use olive oil to help my seasoning mix adhere to the butternut squash and give each cube a beautifully roasted exterior. However, you may also use avocado oil or coconut oil if you prefer. Garlic powder: Though both have a robust garlicky flavor, I recommend using garlic powder instead of minced garlic for this recipe. Garlic powder allows for a more even flavor coating, ensuring every bite of your squash explodes with a rich, gourmet taste. Seasonings: You only need Kosher salt and black pepper to give your air fryer butternut squash cubes a deliciously savory, sophisticated flavor.

Reheat: To reheat your air-roasted squash, place it in the air fryer at 350 degrees F. for 3-5 minutes. Be sure to shake the basket halfway through reheating to ensure even cooking.

Equal-sized cubes: For best results, it is imperative that your squash cubes are similar in size. There’s a direct correlation between air frying time and the size of your butternut squash cubes, so keeping your cubes uniform will ensure no piece of squash comes out over- or under-cooked. Don’t overcrowd the air fryer basket: The key to proper air frying is adequate air circulation throughout the chamber. Therefore, you mustn’t overcrowd your basket when cooking, arranging your squash in a single even layer so that hot air reaches each side of your squash cubes. This positioning will ensure your squash cubes develop an even golden brown exterior and tender insides. Depending on the size of your air fryer, you may have to cook your butternut squash in two batches if they don’t all fit in the basket. Shake halfway through: Be sure to shake the air fryer basket halfway through the cooking process to ensure even air frying on all sides of the butternut squash. Each air fryer is different: We tested this recipe in a Ninja Air Fryer and Instant Pot Air Fryer, and the results were very similar. However, keep in mind that each brand of air fryer is different. Therefore, your butternut squash may need more or less time, depending on the brand you own. When in doubt, check the doneness halfway through the cooking process by inserting a sharp knife into your squash and continue to cook it in one-minute increments until fork-tender. Check doneness: Remember that this recipe’s recommended cooking time may change depending on your air fryer model and the size of your squash cubes. To check whether your butternut squash is ready to serve, I recommend using the “knife test.” In other words, insert a knife into one of your squash cubes and see whether it smoothly enters and exits the veggie. If it does, your air fryer squash is ready to eat. Sugar: If you add sugar to your recipe, I recommend starting with a small amount— one teaspoon at most—to avoid over-caramelizing. If you prefer your butternut squash sweeter, you may drizzle or sprinkle it with additional sugar right after removing it from the air fryer (while it’s still hot). Experiment with seasoning: Feel free to experiment with your squash’s seasoning blend based on what you’re serving it with. Depending on your menu, you may consider adding additional ingredients, like ground cinnamon, brown sugar, parsley, or even ground cumin. Air fryer butternut squash fries: If you want to air fry butternut squash fries, cut your squash lengthwise into French fry-shaped pieces. Then, follow the recipe as directed, air frying them for 15 minutes at 375 degrees F.
