Why You’ll Love Greek Potatoes with Feta
These Greek Potatoes with Feta are one of my favorite side dishes. It’s simple to prepare, the flavors are out of this world, and they’re always a hit with everyone at the table. The Greek seasoning blend is perfection, and I love the tang that comes from the 🍋 lemon juice. The roasted garlic is a simple but huge addition to this dish: sweet and caramelized with a deep garlic flavor that’s not at all pungent on the 🥔 potatoes. You’ll go to this one again and again.
How to Prepare Greek Potatoes with Feta
🔪 Use a sharp knife to peel and cut the potatoes into wedges. (I like to cut the potatoes in half and then lengthwise to achieve wedges.) 🫒 To a large mixing bowl, add olive oil, a generous sprinkle of Greek seasoning, extra salt if needed, lemon juice, and throw in the whole unpeeled garlic cloves. 🥔 Massage everything together with clean hands and then place the potatoes flat in a baking dish so there’s enough room in between and they don’t overlap each other. 🔥 Wrap the dish in foil and bake at 425F (220C) for 45 min covered and then another 15-20 min uncovered. 🧄 Once your garlic has cooled slightly, you can squeeze it out into your potatoes and toss them together. 😋 Garnish with finely minced parsley and feta cheese and enjoy.
