How to Prepare Air Fryer Lemon Potatoes

🫧 In a pot on the stove, boil the baby potatoes with the skin on for 10 minutes or until fork tender. 💧 Then drain them and place them on a flat surface. 🫳 Using a potato masher or a glass, gently press each one down. 🧂 Now, season them with salt and dried oregano. 🫒 Next, brush each one with olive oil and freshly squeezed lemon juice. ♨️ Air fry at 400F (200C) for 6 to 8 minutes until crispy. 🌿 Brush them with some extra lemon juice and then sprinkle on some feta cheese and parsley.
