If you don’t have a food processor, grate the sweet potato using a cheese grater and then mix the sweet potato with the other ingredients by hand. Then, add eggs, sugar, flour, oil, maple syrup, baking soda, baking powder, cornstarch, and pumpkin pie spice to the shredded sweet potato in the food processor. Process until well combined. Transfer the batter into a piping bag or a Ziploc bag with a corner cut off for piping. Pipe the batter into the prepared donut pan and bake for 40-45 minutes until a toothpick inserted in a donut comes out clean.
