Serve as a simple side dish: Roasted mushrooms are probably the easiest side dish to serve with any of your meat, chicken, or vegetarian mains. They even work in healthy breakfasts (especially with egg recipes). Garnish them with fresh herbs, a chopped green onion, and/or a squeeze of lemon juice for a healthy and satisfying side dish. Turn them into a soup: Try this easy recipe for shiitake mushroom soup for an ultra-creamy and silky mushroom soup that celebrates the rich, umami flavors of this delicious mushroom variety. Use them in place of croutons to top vegetable soups like Sweet Potato Soup, Cauliflower Celeriac Soup, and Carrot Ginger Soup. Add them in eggs and savory oatmeal for breakfast: Incorporate oven-roasted shiitake mushrooms into omelets or add a handful into your savory oatmeal for an additional umami flavor. Incorporate into your favorite green salads: Stir these crispy roasted mushrooms into salads for some meaty texture. A few of my favorite salad recipes to use are Pan-fried Asparagus and Shiitake Mushroom, Butter Lettuce Salad, and Spring Mix Green Salad. Use them in Asian dishes: Roasted shiitake mushrooms are a great addition to some of the most popular Asian recipes. I suggest adding them to this Teriyaki Chicken Stir Fry or Vegetarian Ramen Noodles.
Expert Tips
Dry them thoroughly: The secret to crispy/crunchy shiitake mushrooms is to dry them thoroughly. Even though it’s a bit of extra work, take the time to dry them off. Hand-pick them at the store: If you can, hand-pick your mushrooms one by one at the grocery store. When buying shiitakes, look for firm mushrooms with large caps without bruises. Avoid those that are wilted, wet, or slimy. Finish it off with sea salt: If you’re a fan of salt like I am, finish off your roasted shiitakes with coarse sea salt for a bit more flavor.
