Why You’ll Love Vegetable Egg Rolls
These Vegetable Egg Rolls fit the bill when the spring roll craving hits, but you don’t love the idea of a deep-fried treat. And you’ll LOVE my shortcut: a bag of premade coleslaw mix! It’s a great combo of 🥦 broccoli, cabbage, and carrots, already shredded up for you. You can also add your own veggies to it, and use up what you need to from the fridge. Just finely slice or chop up those random 🫑 peppers, zucchini, or mushrooms and add them to the mix. These are air-fried, so they cook up super quickly and without a lot of oil, and the result is a super crispy bite with a fresh filling that’s full of deep umami flavor. Great for make-ahead too, these freeze (uncooked) like a dream!
How to Prepare
🔪 Use a sharp knife to finely dice the onions and garlic. 🧅To a pan on the stove, add the olive oil and sauté the garlic and onions until translucent. 🥦 Add the coleslaw mix, soy sauce, and hot honey and cook for about a minute. 🧂 Taste for salt and add more if needed. ❄️ Now, take the veggies off the heat and cool for a few minutes. 🥄 Now, place an egg roll wrapper on a plate and add a heaping tablespoon of the filling to the middle. 🌀 Fold the right and left sides of the wrapper over the filling. Now take the opposite side of the wrapper, which is facing you, and roll it forward making sure to keep that filling tight. Then roll it all the way to the end. 👩🍳 Repeat this step until all the filling is used. 🥑 Spray each roll with avocado oil spray and place it in the air fryer. ♨️ Cook the Vegetable Egg Rolls at 400F (200C) for 8 minutes flipping halfway through. 🍁 In a bowl, make your dipping sauce by stirring together the maple syrup with soy sauce and sriracha to taste. Enjoy!
