I may even go as far as to tell you that this is the best watermelon salad recipe in the world. Not just because it is made with just a few ingredients and takes less than 15 minutes to put it all together, but also because I can’t think of any other salad that embodies the best that summer produce has to offer. A combination of Mexican and Mediterranean flavors, this fresh watermelon salad is a great way to cool off during the hot summer days. Just like my Avocado Mango Salad, Peach and Avocado Salad, and Quinoa Avocado Salad, it is easy to make with just a few ingredients you probably already have in your fridge.
Ingredients:
To make this avocado watermelon salad, you will need ripe avocado, ripe watermelon, a small red onion, fresh mint leaves, and crumbled feta cheese. For the salad dressing, you will need freshly squeezed lime juice, olive oil, salt and black pepper.
Substitutions and Variations:
Lemon juice: If you do not have lime juice, you can use lemon juice instead. Balsamic vinegar: A splash of balsamic vinegar would be a great addition to the dressing. However, you can also use my Lemon Balsamic Vinaigrette recipe as the dressing here. Red Onion: While thinly sliced fresh onions work very well here, if you have some, you can swap them with pickled onions. I especially love my Mexican pickled onions in this salad as they pair perfectly with the sweet watermelon. Cheese: I took some inspiration from my Mediterranean roots and used feta cheese, but crumbled goat cheese, fresh mozzarella, or torn burrata would all work in this watermelon salad with avocado. Cucumber: If you have it, you can also add in a sliced English cucumber to make it even more wholesome. Fresh Basil: You can swap fresh basil with mint here, especially if you use fresh mozzarella instead of feta.

To Make Ahead: You can make this salad a day in advance. Though if you do so, I recommend mixing the dressing, feta cheese, and the rest of the salad ingredients right before serving. To Store leftovers: If you have leftovers, feel free to place them in an airtight container and store them in the fridge. They should still be good on the next day.
What To Serve With Watermelon Salad?
While this watermelon salad with feta and mint makes a great summer lunch when served by itself, I think it is also the perfect summer side dish to serve with main dishes. Below are a few of my favorite recipes to serve it with:
Grilled Meat: I especially love serving it with grilled seafood because its sweet and savory flavors complement the smoky flavors of fish. Try it with my Grilled Mahi Mahi and Grilled Shrimp Skewers. Sandwiches, Pizza & Burgers: Serve it with my Chicken Caprese Sandwich, Caprese Pizza, or Guacamole Burgers. Roasted Chicken: Make it a whole meal and serve it as a side dish with my Roasted Bone-In Chicken Breasts or Greek Yogurt Marinated Chicken. Bite-sized chunks: Cut your watermelon into small bite-sized cubes that are equal in size. Or, if you have one, use a melon baller to cut out small balls. Chill before serving: If you have time, I recommend letting it sit in the fridge for 30 minutes so that the flavors will have some time to marinade, but it will still be delicious if you don’t have the time. Use a large salad bowl: Since there are very few ingredients and both watermelon and avocado are quite fragile, tossing them in a large mixing bowl is easier than having to do it in a small bowl. This way, you can easily mix them without bruising the fruit.
